A Healthy Souper Bowl Dish

I am not much of a sports fan. My parents never watched sports and I never played sports. When I met my husband, who is a sports fanatic, I knew very little about football or any other sport for that matter. I still don't know a lot, but I've learned to appreciate the time together spent cheering on our favorite teams and sharing food together.

It is a family tradition in his family for everyone to get together and watch the Super Bowl, no matter who is playing. They play cards and hang out all day and then watch the game together. Their food of choice is Jambalaya. I know a lot of people order pizza on that day or make chili or just have wings and finger food. Regardless of what most people are having, there is usually not a healthy option. 

Today, I created a soup that is so delicious, healthy and has a kick to it. Great for a Super Bowl Party. I used ground turkey sausage, but you can use any kind of sausage you like. I also put a combination of collard greens and kale in mine that I had in the freezer from my garden over the summer. You can use whatever greens you like. You can also adjust the amount of kick it has by using more or less white pepper. Feel free to adjust any of the seasonings to your liking.

I started with dried navy beans and soaked them overnight. Then I made the soup in my Instant Pot. You can just as easily use canned beans (be sure to drain and rinse them first) and make it on the stovetop. 

Another hint: Whenever I cook beans (dried beans that I've soaked first), I always put a piece of Kombu seaweed in with the beans. The enzymes in the Kombu helps make the beans softer and more digestible, and less gas producing, which is always a plus, especially when you are around a lot of people at a Super Bowl party :).
